Eat-Clean Diet Giveaway Winner & One Night in Bangkok

Good evening Beautiful,

Happy Monday!
I know most people don’t like Mondays, but I enjoy them. They usually fly by for me because I have so much work to do! This week we’re holding a summit at work so there is a ton of stuff to be done for it. Oddly enough, everyone at work is working really hard at finishing it up, but I honestly have no additional time to take on any extra tasks besides my day to day duties. I’m definitely not complaining because I’ve asked to have as much work as I do, and it keeps me busy (side note, being bored is one of the things I hate most in this world) so I appreciate it. The day of the summit however, is going to be insane. I have to be up at on location at 6am (ummm… this in itself is going to be difficult, I’m not a morning person) and in 100% peak attitude all day which can sometimes be exhausting. I will definitely snap some photos the day of and let you know how it all went down! I’m assisting all of our speakers so that should be fun!
Lately around here, it’s like an 80s flash back. In the last week or so I’ve discovered a few gems that I didn’t know about previous to last week. So basically, I’m currently obsessed with the following song, please listen to the whole thing because it’s the most amazing song ever:

I don’t know if I’ve ever disclosed this before, but I’m a huge fan of 70s and 80s music, like, Michael Jackson is easily my favourite artist of ALL TIME. At one point in time, I owned this Michael Jackson Barbie Doll:

I had ALL of his cd’s, and I still own Thriller on vinyl. I could do the exact dances that he performed on more than 1 of his music videos, I would download the music videos old school on Napster and watch them over and over again in my living room and learn the choreography and thought I was the coolest thing EVER. I was completely obsessed with MJ. I cried when he died, but I know I wasn’t alone in that. So finding some new old school songs to listen to basically makes my life. Any favourite 80s tunes that I should check out?
So today my legs were still a complete wreck. I couldn’t walk normally, more than 1 person commented on my lack of mobility and it basically hurt to do anything, cross my legs, sit down to pee, walk…. I had totally planned on working out my upper body today, but I honestly was so sore that I just couldn’t bring myself to do it (and I was really plowing through all of my work today, so I didn’t want to break my roll especially having to be out of the office at least 1 day this week which usually really sets me back). I also ate about half of a medium gluten free pizza with normal cheese on it today for lunch. Coincidentally my stomach is extremely crampy right now so I’m sitting on the floor my knees to chest instead of laying out in bed like I normally do when I write.
I knew this would happen eating THAT MUCH pizza with normal cheese, so I can’t complain… this was 100% my decision, and oh was it ever tasty.
Speaking of tasty, tonight I finally made my gluten-free, dairy-free cupcakes! They are SO GOOD. I’m bringing them to work tomorrow so that I won’t eat them all myself. I love them because they weren’t overly sweet, and it was just soooo satisfying.
Ingredients
1/3 cup of olive oil
¾ cup of milk of your choice (I used vanilla almond milk!)
¾ cup of water
1 tsp vanilla extract
¼ - 1 cup of sugar depending on your needs (I used 1/3 of a cup of organic sweetener. I know – not paleo, but I’m hoping it’s better than using real white sugar)
1 package of Allergic Solution Vanilla Cake Mix

Directions
1. Preheat the oven to 325F, or 160C.
2. Mix the oil, water, milk, vanilla extract and sugar in a large bowl and whisk until the sugar has dissolved.
3. Gradually add the vanilla cake mixture and whisk until the it’s completely combined and smooth.
4. Pour batter evenly into the 12 cupcake portions of the tin.
5. Bake for about 15 minutes.
6. Set and let cool before adding the icing from yesterday on the cupcake.
7. EAT THEM UP AND SMILE!
